I discovered Gaston’s when I bought a loaf of their potato bread at a fruit stand on Highway 44 in Eagle. It was a fantastic, crusty round loaf with actual chunks of potato bread. We rapidly consumed the heavy loaf with our dinner and lunch the next day. It was so good that my husband called from work the next day to ask where the bread came from. So I looked them up and have stopped by their bakery near Overland a couple of times. I also hear their bread is also available at the Boise Coop. It’s great bread, but not cheap. The potato loaf is over $7 at the bakery, but I paid $6+ at the fruit stand. We have also enjoyed their croissants and whole wheat sourdough. All of it is great. They have French baguettes that are like $3.45 and are much, much better than local grocery store (fake) French bread—but not quite as amazing as the baguettes I had in Paris this fall. That’s okay, I’m happy Gaston’s is much closer than Paris and doing great work!

No one bakes like Gaston.
My wife and I consider the sandwich we made on our honeymoon using locally made sourdough to be the best sandwich either of us have ever had. So good that we tried to special order the bread from that island and found it to be prohibitively expensive. Last night for Valentine’s Day, we used Gaston’s sourdough Batard for a chicken, bacon, mozz with basil pesto. She said, “I’m sayin it. This is better.”

This is our first visit & we will return again. The fresh baked bread smells enticed us as we entered. We were later in the day, otherwise Im sure there would have been even more selection.
We loved all we tried! A chewier croissant due to freshly milled flour, we heated some in our airfryer & found them even better flakier & more buttery. We tried the almond croissant, a Gruyere & thyme, bacon twist stick, cranberry scone, & a raisin swirl...but they had lots of loaves of bread and rolls too.
We all felt the prices were good & left happy with our bill & the quality.
We also loved the big windows where we watched the workers making fresh rolls.

I feel like a lot of people are misunderstood about which is the best bakery in town. This is the best bakery in town. No disrespect to the other bakeries in town because there are plenty of them that are very good, but Gaston's is special. I am essentially physically addicted to their sourdough batard and their pastries. We really are very fortunate to have such a fantastic bakery here in Boise.

Gaston's Bakery
Entrance on Pacific, at 3651 West Overland Road and open 9am-2pm everyday
I would give Gaston's Bakery five stars, just because of the wonderful job they have done in supplying great sandwich rolls, breads and other pastries to restaurant and grocery operations. This week I took a photo of one of the delivery trucks at Kahootz in Meridian, and previously raved about the Bahn Mi with Gaston's bread at Basquenese Food Truck.
Unfortunately, we live out in a rural area so the easiest to get to dining options are to go close by or end up doing take out with the dog in the back seat. Sure miss working in downtown Boise and being able to make lunch trips in a small circle that would have most certainly included stops here.
Last Sunday, my wife had a desire for a “jelly filled donut” and searching nearby, Gaston’s Bakery popped up. Got there late, so instead of finding a filled choice she'd like, I selected a Raisin Danish and Butter Croissant, and a Ham & Cheese Croissant plus a Marionberry scone for me. And, for both, Olive Bread. The Croissant was extra flakey, light and airy. I wished for more filling in the ham and cheese version. Still, very good and would order again. The star of our visit was warming up the olive bread at home and dipping slices in basil infused olive oil and balsamic vinegar. I had been searching off and on for an olive loaf that actually had olives scattered throughout, with a little of the brine flavor and a dense texture to hold up to dipping. Finally found it here!
And, did you know that the owner Mathiew Choux was the pastry chef at Le Café de Paris in downtown Boise years ago.

Small, cute bakery. The staff was super friendly. The croissants are delicious, super flaky, and very tasty. Definitely would get more croissants. If you like croissants I would stop here and try some. Tried a marionberry scone, the scone was good but really couldn't taste the marionberry. They had a bunch of different baked bread selections. Didn't try any, but all of them looked very yummy. I would definitely go back here again to try some of the different pastries.

Best pastries ever. I go there every few weeks (better for my waistline) & I recommend getting there early because they will definitely sell out. There is a reason that local restaurants advertise carrying their sourdough bread. It is perfection. The croissants and scones, the olive bread, literally everything has been amazing. They have savory pastries also, which is really great for those who don't have a sweet tooth. The staff is lovely and it is totally worth a visit.
Edited to add: the almond croissant is insane.
